Pink Bourbon

Pink Bourbon has become one of Colombia’s most sought-after varieties for its elegant, high-definition cup profile. It is especially prized for its floral lift, juicy acidity, silky texture, and layered fruit sweetness — often showing notes such as peach, melon, papaya, jasmine, rose, honey, and citrus depending on origin, terroir, and processing.

What makes Pink Bourbon so compelling is the combination of clarity and sweetness it can produce in the cup. It can feel delicate and expressive at the same time — bringing together floral aromatics, ripe fruit character, and a refined, tea-like elegance that has made it especially popular in high-end specialty coffee.

Natural Process

Natural processing begins with carefully selected ripe cherries that are dried with the fruit still intact around the seed. Because the coffee remains inside the cherry during drying, sugars and fruit compounds have more time to influence flavour development, giving the cup greater sweetness, body, and fruit intensity.

As the cherries dry, the seed absorbs characteristics from the surrounding fruit, often creating notes that feel more ripe, expressive, and syrupy than washed coffees. In this coffee, that translates into cooked peach, mango sweetness, and a soft brown-sugar richness, while still retaining the floral elegance of the Pink Bourbon variety.

Once drying is complete, the coffee is milled and rested before export, allowing the flavours to stabilise and the profile to become more integrated in the cup.
